2 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
1 tablespoon ground cinnamon
1 cup unsalted butter, softened
1 cup granulated sugar
½ cup brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
½ cup granulated sugar (for rolling)
2 tablespoons ground cinnamon (for rolling)
Instructions
Preheat your oven to 350°F. Line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and 1 tablespoon of ground cinnamon. Set aside.
In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
In a small bowl, combine the ½ cup granulated sugar and 2 tablespoons of ground cinnamon for rolling.
Scoop out dough using a cookie scoop or tablespoon, roll into balls, and then roll each ball in the cinnamon-sugar mixture. Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
Bake for 10-12 minutes or until the edges are lightly golden. The centers may look slightly underbaked; they will continue to cook on the baking sheet.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
This recipe makes about 24 cookies.
For an extra twist, try adding a drizzle of melted chocolate or caramel on top of the cooled cookies.
You can substitute half of the all-purpose flour with almond flour for a gluten-free version.
