- 1 cup cottage cheese
- 1 large egg
- 1 cup whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon olive oil
- 1 teaspoon garlic powder (optional)
- 1 teaspoon dried herbs (such as oregano or basil, optional)
- In a mixing bowl, combine the cottage cheese and egg. Mix until well blended.
- Add the whole wheat flour, baking powder, salt, olive oil, garlic powder, and dried herbs (if using) to the bowl. Stir until a dough forms.
- Lightly flour a clean surface and knead the dough for about 2-3 minutes until smooth.
- Divide the dough into 4 equal portions and roll each portion into a ball.
- Using a rolling pin, flatten each ball into a round flatbread, about 1/4 inch thick.
- Heat a non-stick skillet over medium heat. Cook each flatbread for about 2-3 minutes on each side, or until golden brown and cooked through.
- Remove from the skillet and let cool slightly before serving.
Notes
- For a cheesy flavor, mix in 1/4 cup of shredded cheese into the dough before cooking.
- Serve the flatbreads with your favorite dips, such as hummus or tzatziki, or use them as a wrap for sandwiches.
