Ranch Garlic Parmesan Chicken Skewers are a flavorful and easy-to-make dish perfect for grilling enthusiasts. These skewers are marinated in a delicious ranch dressing and garlic mixture, then grilled to perfection.

Ingredients

Scale
  • 2 pounds boneless, skinless chicken breasts, diced into 1-inch pieces
  • 1 cup ranch dressing
  • 4 cloves garlic, finely chopped
  • 1 cup shredded Parmesan cheese
  • 1 teaspoon ground black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon sea salt
  • 1 tablespoon extra virgin olive oil
  • Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes)

Instructions

  1. In a mixing bowl, whisk together the ranch dressing, chopped garlic, shredded Parmesan, black pepper, smoked paprika, and sea salt until well combined.
  2. Introduce the chicken pieces to the mixture, ensuring each piece is thoroughly coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least one hour, or overnight for enhanced flavor.
  3. Prepare your grill by preheating it to medium-high heat. If you’re using wooden skewers, make sure they have been soaked to avoid burning.
  4. Carefully thread the marinated chicken onto the skewers, ensuring there’s a bit of space between each chunk for optimal cooking.
  5. Lightly drizzle the skewers with extra virgin olive oil to help prevent sticking during grilling.
  6. Place the skewers on the grill and cook for about 10-12 minutes, turning them occasionally until the chicken is fully cooked and exhibits beautiful grill marks. The internal temperature should reach 165°F.
  7. Once cooked, take the skewers off the grill and allow them to rest for a few minutes before serving.

Notes

  • For an added kick, mix in a teaspoon of cayenne pepper to the marinade.
  • Pair with a refreshing salad or a platter of fresh veggies for a well-rounded meal.
