  • ½ cup whole milk, warmed (about 110°F)
  • 2 large eggs
  • ½ cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • ½ cup chocolate chips
  • 1 cup whole milk (for custard)
  • 2 large egg yolks (for custard)
  • ¼ cup granulated sugar (for custard)
  • 1 tablespoon cornstarch (for custard)
  • 1 teaspoon vanilla extract (for custard)

Instructions

  1. In a large mixing bowl, combine the flour, sugar, instant yeast, and salt.
  2. In a separate bowl, whisk together the warmed milk, eggs, softened butter, and vanilla extract until well combined.
  3. Gradually pour the wet ingredients into the dry ingredients, mixing until a soft dough forms.
  4. Knead the dough on a lightly floured surface for about 5-7 minutes, until smooth and elastic.
  5. Place the dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place for about 1 hour or until doubled in size.
  6. While the dough is rising, prepare the custard by heating the milk over medium heat until just simmering.
  7. In a separate bowl, whisk together the egg yolks, sugar, cornstarch, and vanilla extract.
  8. Slowly pour the hot milk into the egg mixture while whisking constantly.
  9. Return the mixture to the saucepan and cook over medium heat, stirring continuously, until thickened (about 5-7 minutes). Remove from heat and let cool.
  10. Once the dough has risen, punch it down and divide it into 12 equal pieces.
  11. Flatten each piece into a disk and place a tablespoon of custard and a few chocolate chips in the center.
  12. Fold the edges over to seal and shape into a ball.
  13. Place the brioches seam-side down in a greased muffin tin.
  14. Cover the muffin tin with a clean kitchen towel and let the brioches rise for another 30 minutes.
  15. Preheat the oven to 350°F.
  16. Bake the brioches for 20-25 minutes, or until golden brown.
  17. Allow to cool slightly before serving.

Notes

  • For a richer flavor, try adding a pinch of cinnamon to the dough.
