A delicious and healthy recipe featuring shrimp and zucchini noodles tossed in a vibrant chimichurri sauce.

  • 1 pound large shrimp, peeled and deveined
  • 4 medium zucchinis, spiralized
  • 1 cup fresh parsley, chopped
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 1/4 cup cherry tomatoes, halved (optional)

Instructions

  1. In a medium bowl, combine parsley, olive oil, red wine vinegar, garlic, red pepper flakes, salt, black pepper, and lemon juice. Mix well to create the chimichurri sauce. Set aside to let the flavors meld for at least 15 minutes.
  2. Heat a large skillet over medium-high heat. Add the shrimp and cook for about 2-3 minutes on each side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  3. In the same skillet, add the spiralized zucchini noodles and sauté for 2-3 minutes until just tender.
  4. Return the shrimp to the skillet with the zucchini noodles and pour the chimichurri sauce over the top. Toss everything together until well combined and heated through.
  5. If using, add the cherry tomatoes and toss gently. Serve immediately.

Notes

  • For a spicier kick, add more red pepper flakes or a dash of hot sauce to the chimichurri.
  • Substitute the shrimp with grilled chicken or tofu for a different protein option.
