A creamy and delicious pasta dish featuring Boursin cheese and fresh broccoli, perfect for a quick weeknight dinner.

Ingredients

  • 8 ounces pasta (such as penne or fusilli)
  • 2 cups broccoli florets
  • 8 ounces Boursin cheese (garlic & herb flavor)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. In the last 3 minutes of cooking, add the broccoli florets to the pot. Drain the pasta and broccoli, reserving 1/2 cup of the pasta water.
  2. In the same pot, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute, until fragrant.
  3. Lower the heat and return the drained pasta and broccoli to the pot. Add the Boursin cheese and a splash of the reserved pasta water. Stir until the cheese melts and coats the pasta and broccoli evenly. If the sauce is too thick, add more reserved pasta water as needed.
  4. Season with salt and pepper to taste. Sprinkle with grated Parmesan cheese and mix well.
  5. Serve immediately, garnished with fresh parsley.

  • For added protein, consider mixing in cooked chicken or shrimp.
  • Substitute the broccoli with other vegetables like spinach, asparagus, or peas for different flavors and textures.
