Vibrant Blueberry Bliss Cookies that are vegan and naturally blue, perfect for a sweet treat!

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon sea salt
  • 1/4 cup melted coconut oil
  • 1/2 cup packed brown sugar
  • 1/4 cup oat milk (or any plant-based milk)
  • 1 teaspoon pure vanilla extract
  • 1 cup blueberries, fresh or frozen
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. In a bowl, combine the flour, baking powder, and sea salt, whisking them together until well mixed.
  3. In a separate bowl, blend the melted coconut oil with brown sugar until creamy.
  4. Pour in the oat milk, vanilla extract, and lemon juice, stirring until the mixture is smooth and homogenous.
  5. Gradually incorporate the dry ingredients into the wet mixture, stirring gently until just combined.
  6. Carefully fold in the blueberries, ensuring they remain intact.
  7. Scoop out tablespoon-sized mounds of dough and place them on the prepared baking sheet, leaving a couple of inches between each one.
  8. Bake for approximately 12-15 minutes, or until the cookies are golden around the edges.
  9. Let them rest on the baking sheet for 5 minutes before moving them to a wire rack to cool completely.

Notes

  • For an extra kick, consider adding a dash of nutmeg or folding in some chopped walnuts.
  • You can also swap out the blueberries for blackberries or diced peaches for a delightful variation.
