  • 2 cups shredded cooked chicken
  • 1 bag (12 oz) corn tortilla chips
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded pepper jack cheese
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup chopped fresh tomatoes
  • 1/2 cup sliced fresh or pickled jalapeños
  • 1/4 cup diced green onions
  • 1/4 cup sour cream
  • 1/4 cup creamy guacamole
  • 1/4 cup chunky salsa
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the shredded chicken with smoked paprika, ground cumin, salt, and black pepper until well-coated.
  3. On a large baking sheet, lay out the tortilla chips in a single layer.
  4. Spread the seasoned chicken evenly over the chips.
  5. Layer the black beans, chopped tomatoes, jalapeños, and both cheeses generously on top.
  6. Bake in the oven for 10-15 minutes, or until the cheese is melted and bubbling.
  7. Allow to cool for a few minutes after removing from the oven.
  8. Garnish with green onions, sour cream, guacamole, and salsa before serving.
